HOW IS SOUR YEAST STORED?

 

Sourdough production requires a great deal of patience. The yeast needs to be fed regularly at the same time each day until it is ready for use for an average of ten days. After producing, it should be stored in the right conditions so that all the labor is not wasted.

 

HOW TO STORED SOUR YEAST Dough?

 

The dough should be stored in a dark environment, covered with a little air. If you want to store it at room temperature, you should place the yeast in a dry place away from the sun.

Storing in the refrigerator in a glass jar with a lid is also among the options. Storing in the refrigerator slows down the fermentation process of the yeast. This option It should be preferred if sourdough is not to be used frequently.

HOW TO FEED SOUR YEAST?

 

One-fifth of the sourdough jar is left in the jar. The remaining dough is discarded. Water and flour are added to double the amount of yeast remaining in the jar. The new dough obtained is left to stand again. 

Yeast fed every day becomes healthier and stronger. At the end of an average of ten days, the fermentation process of sourdough is completed. Its readiness is determined by using a container of water. If the yeast floats in water, it's ready. 

 

WHAT ARE THE STORAGE CONDITIONS BY DRYING?

    As with the drying method, one of the storage methods that can be used if the sourdough is not used for a long time is freezing.

    The yeast is divided to make it easier to use later. Each piece is placed in a separate freezer bag and stored in the freezer. Thus, sourdough can be stored for a long time. When necessary, it is sufficient to leave it to melt at room temperature. After thawing, you can activate the beneficial enzymes in it by feeding it.

    You can store it in an airtight container or bag at room temperature. If you are going to use cloth bags, choose tight-pored bags with low air permeability. If you are going to store it in a plastic bag, you should use zip-grip bags.

    Bread can also be stored in an airtight container in the refrigerator. In cases where it will not be consumed for much longer, you can slice it and put it in the freezer. After thawing, they do not lose anything from their freshness and healthy nutritional values.
